1 (8 oz.) can crushed pineapple
1/4 cup dry coconut flakes (optional)
1/2 cup finely shredded carrots
1 (8 oz.) package cream cheese
1/2 of an 8 oz. package light cream cheese (this is important for texture.)
1/2 tsp. ginger (powdered works best here)

1 1/2 c. butter, softened
1/2 lb. sharp Cheddar cheese, grated, softened
1 c. finely chopped pecans
In large bowl, blend butter and grated cheese. Blend in half of flour (1 1/2 cups). Add remaining flour, seasonings, caraway and pecans. Blend thoroughly.

1 teaspoon white horseradish
1. Mix a grated cheddar cheese with softened butter.
